Baco – Josef Centeno

For September we returned to the LA area, using the Baco cookbook by Josef Centeno, chef and owner of several LA restaurants, including namesake Baco Mercat. Centeno uses spice blends and sauces to flavor dishes, and of course includes a recipe for the flatbread that is used to make the Baco sandwiches which the cookbook and restaurant are named for.
